Viva México

Diego invited us to celebrate the Mexican Independence Day, 16th September, with him. It was a typical Mexican evening with Mexican food, cooking class, Mexican music, salsa dancing and tequila. Together we prepared Sope and Quesadillas.  

Sope: 

First, we boiled chicken breast in hot water. After the chicken was boiled we pulled the chicken into small pieces.  

The Sope dough is made of corn flour, called masa harina, salt and water. The mass is formed into ½-inch thick circle and fried in hot oil until the Sopes are golden on both sides. After that you remove the Sopes from the pan and place it on a paper towel-lined plate. Then the Sopes are filled with fried smashed beans, cream, pulled chicken, cheese, lettuce, onions and salsa. The salsa was spicy and of course we could not handle as much as Diego could. 

Fried Quesadillas: 

The Quesadilla dough is the same as the Sope dough. It is made of masa harina, salt and water. The dough is formed into small flat circles and stuffed with cheese. The Quesadillas are fried in hot oil until they are golden on both sides.  

I enjoyed the evening. It was fun to prepare the tasty food together, learn typical Mexican recipes while we listened to Spanish music and danced salsa. I never tried one of those dishes before and they were delicious! I am so happy to have the recipes, so I can prepare them myself at home. Further I learned a Mexican tradition called “El Grito de Dolores”. At 11pm on the 15th September the Mexican president steps on the balcony of the national palace in Mexico City. The president and the crowd are yelling these words together: 

¡Mexicanos! 

¡Vivan los héroes que nos dieron la patria y libertad! 

¡Viva Hidalgo! 

¡Viva Morelos! 

¡Viva Josefa Ortíz de Dominguez! 

¡Viva Allende! 

¡Vivan Aldama y Matamoros! 

¡Viva la Independencia Nacional! 

¡Viva México! ¡Viva México! ¡Viva México!
